Best Mexican Food in Eagle

Can't say enough good things after the first visit with my husband and 90+YO mom. We were used to the excellent food and service at the Meridian location, and the new Eagle restaurant lived up to our expectations and then some. Mom loved the grilled veggie quesadilla, my steak ranchero and hubby's #2 chimichanga with shredded beef were amazing! We have leftovers for tonight, the servings were so very generous. We can't wait to go back! Hope you are around for a very long time. :-)

I don't hand out 5 stars unless it is deserved. I am totally impressed with Pueblo...the food was incredible and service excellent. I had a burrito and asked for chili Colorado sauce on it. I have had Mexican food from coast to coast and the chili Colorado sauce is the best I've ever had. The carnitas was very good and tender and had plenty in the burrito. Serving size is generous and food quality very good. The sauce with the chips was also very good. I look forward to returning soon!!…

My wife and I had an incredible dinner at Pueblo Lindo Mexican Restaurant in Eagle, Idaho. We shared the steak fajita. It came out sizzling hot after about 8 minutes—flavorful, tender, and perfectly cooked. The ice-cold draft beer went perfectly with the meal. The restaurant is very clean, including the restrooms. From our table near the entrance, we could see the kitchen’s orders-out station, and I was impressed to see the stainless surfaces cleaned thoroughly between orders. That attention…

Great little family ran Mexican restaurant! Was able to get in on a Saturday evening just fine. The food came out very quickly and was delicious! The chile rellenos was flavorful and so yummy. The Cameron de crema was amazing, the sauce was delicious with spices, not just a bland white sauce. Definitely would recommend, very friendly too!

The service was fast and the food was quick! The best fajita nachos I have ever had! I removed a few things, and they were just to my liking! The fried ice cream was just how I like it with the cereal! It has strawberries and chocolate on it! My friend got the Chile Relleno I really want to try their peach and the apple chimichanga! Sounds so good!!
